The Medlar Huddle - how a top-class restaurant start their evening



Oh no!


Not another post about the importance of the morning huddle?


Yep.


On Friday 5th July, Annie and I arrived at Medlar, a restaurant on the King's Road in Chelsea, for a long-anticipated dinner with Nick Fahey and Sarah Fitzharris.


The table was booked for 18:30 as we all had busy weekends planned and our cab from Marylebone arrived a few minutes early.


So we walked through the open door and, looking down the narrow room to the back of the establishment, there were the full team, gathered in a circle for their "evening huddle".


One team member broke away to greet us but I encouraged her to seat us and then return to the meeting.


It was impossible not to listen out for what was being discussed; the menu for the evening, likely number of covers and any operational issues that had to be shared.


What followed was a superlative dining experience, to add to the good company and excellent wines.


Just a simple reminder that huddles make a difference, bring the team together and look great from the customer's perspective.
